Marinated Feta and Olive Skewers

Marinated Feta and Olive Skewers
 
Ingredients
  • 20 Skewers
  • 10 pitted green olives
  • 10 pitted kalamatas
  • 3 tablespoons orange juice
  • 2 teaspoons orange zest
  • 1 teaspoon of cracked black pepper
  • 1 teaspoon fennel seeds
  • ¼ teaspoon Dijon mustard
  • 20 mint leaves
  • 1 seedless cucumber, medium dice
  • feta, 20 medium dices
Instructions
  1. In a medium bowl, combine fennel seeds, orange juice, orange zest, pepper, and Dijon and whisk together
  2. Cut feta and place in mixture and let it sit and marinate for one hour
  3. Cut cucumber into ¼ in cubes
  4. To assemble skewer: Mint leave, then olive, feta, olive, cucumber
